Talking about Japan, here's a soba noodle master. Soba means buckwheat, so is not a real grain. Buckwheat is totally gluten free, and has the tendency to dissolve after about 20 minutes or so being formed into noodles. So it must be eaten quickly after it's being cooked.

He's a noodle cutting machine. And making noodles out of soba is a real challenge to your cooking techniques taking years to master, he's doing it on a daily base from scratch.


And this is fun to watch: how mochi are being made out of rice. Yes, the green thing they are pounding is rice.

All of them. Especially the bits you'd never eat if you knew what they were.

Basically all of the stuff that people like to say makes "pink slime" gross and bad to eat, those same people have already been drinking in their stock for their entire lives, assuming it was made right.

By the way, since I've taken Veritable Quandry's advice and started batching my soft-boiled eggs ahead of time, making my instant ramen is now back down to a sensible 7 minutes or so. Thanks for that! :)

I did start adding scallions too by the way, but I also chop them straight from the store and freeze them, so it doesn't add any prep time when I'm actually making stuff. If you're using them for garnish I wouldn't recommend doing that, I'd recommend using fresh ones for that; but if you're using them to cook with it's great.

Fast food is kind of out isn't it? I used to get something on the way home a couple of times a week, now it's maybe once a month. The food was never great as it was, but fast food was never about great food, it was purely a value proposition and that value proposition has evaporated. For a while there it was like "oh get the apps, there's decent deals in the apps" but even the app deals are bad and stupid now.

I agree, fast food is nowhere near the value it once was. Even Taco Bell, which used to be my go-to when I needed something good and cheap (especially when I used to live across the street from one), is ridiculously overpriced these days. There are still a few decent deals in the app, but they are so limited.

Even traditional sit-down diners like Chili's, Denny's, or Black Bear, are crazy expensive these days. Where I used to be able to feed a family of four for about 60 bucks including tip, now it costs about that much for just my husband and I.

I miss Burgerville.

Fast food has been getting more expensive at the same time quality is spotty and they are putting more AI assistants or apps in the ordering process. The Wendy's near us took humans out of the drive through.

At OSU the University bought up a lot of surrounding property and in rebuilding got rid of most of the independent lunch spots. There used to be a great cheap New York style pizza place (two slices and a drink for $6) but now it's higher price chains. One good donut/gyro place is holding on. But we eat out a lot less overall.
