My daughter has gotten me on this spinach kick, mostly mixed in omelets but also with a me sandwiches.

But man, we don't use hardly any of a bag before it goes bad, which feels wasteful, but the bag is like, $1.50 or something, so it feels, less wasteful?
You can blanch them really quick, the freeze, then add them to pasta sauce.

Spinach salads can be a really amazing thing, and a great way to use a bag of spinach.
With a warm dressing of bacon grease, shallots, garlic, and vinegar. Use the bacon grease to sweat the shallots and garlic. Season to taste. The object of the game is to wilt some of the spinach with the not-quite-hot dressing as you pour. Do I need to mention the bacon goes in the salad? Didn't think so. 🥓

Throw in mandarin orange slices or some berries for something slightly sweet against the grease.

Mom thought this was some sort of traditional Armenian dish, but I suspect that just means someone with an Armenian last name told her about it. Nevertheless, it was called Armenian Wilted Spinach Salad at our house and you are welcome to carry on what may be a misguided tradition.

Sigh. I remember way back when "Cobb salad" actually meant something, and not just "chicken bacon ranch salad with half a boiled egg on top". How far our culture has fallen.

Right? Used to be this perfect mix of textures and flavors, now it’s just ranch-soaked chicken and bacon thrown on lettuce. Feels like we’ve lost the art of actually crafting a salad.

I had to look that up. Looks amazing, and wiki says it’s typically made with blue cheese (or blue cheese dressing which would really push it to the top for me, although other cheeses can also be used.


I think I’m going to make myself a Cobb salad this weekend.

Coffee aficionado version of "teach a man how to fish"...

You can get a Rancilio Silvia E for about 400 Euros. A decent coffee grinder will set you back by 100-200 Euros.

Use espresso as the basis for any of these recipes:
