Unfortunately, as usual, the Dems are saying this to the people who agree with them and not doing anything to find ways to communicate it to the people who are only getting the focused hose of disinformation from Trump.

Oh, I agree. But, by leaving Barr will ensure that he uses a yes man, and this will drag on even longer and encourage all of the people out there who have fallen under the insane spell that this election was stolen from Trump. I wouldn't put it pass him and/or whomever he has take this man's place to manufacture "evidence".

So, to me, resigning in protest seems to be counterproductive and largely symbolic or a pyrrhic victory.

That's not how this works. The Elections crime unit *reviews* cases after the various district offices investigate. This takes time. By the time the cases get to them, Barr will have been replaced, and the elections certified. All Barr is doing is making a show for his boss, so he doesn't get fired. It will be a nothingburger like the last several investigations that Barr tried to get done.

I'm sitting here wondering what the Trump flock will do with the evidence if they actually find voting irregularities - in a state Trump won.

What they don't seem to get is any irregularities affect all the down-ballot races too, some of which they won.

No. Just no. If he was, indeed, joking, I would normally say "don't leave your day job." In his case, he needs to ditch his day job AND refrain from stand up in the evenings.
