It is an American South thing. Hoppin' John is a spicy black eyed peas dish. The peas are simmered with smoked pork ... usually a ham hock or bacon. Celery, onion, bell pepper - which Dakota probably knows is called Trinity. Herbs and some fairly hot pepper sauce, top with scallions and serve over rice. If you are hard core you serve it with collard greens. Very good and supposed to bring you good luck if eaten on New Years Day.It is the first time I hear about this tradition.
