My Great Grandmother used to make head cheese and as a kid, I loved it. Basically she'd chop the pork cheek and tongue and left over other small bits of the pig and put them together in spices, green olives, pimentos and aspic. It reminded me of Bologna or Mortadella but courser. It was very tasty.Mmm, head cheese and cabbage...

I like beef. But I have cut down significantly on it, now eating it maybe 4-6 times a month instead of 3-4 times a week. But, like you, chicken is non-negotiable. Chicken is just too darned tasty to cut back on. Pork, I eat maybe once or twice a month at most. I need my dairy though; I can't imagine life without ice cream and cheese.Serious post!

I'm not completely out of the beef side of things, but over the past 10 years or so I've cut down my intake on beef products to about 3-4 times a year, which is the rare burger; I really don't miss steak and all the beef dishes I ate as a kid. I would love to drop dairy completely, though, leaving pork and chicken.
