I believe I have located an excellent torta approximately 15 miles away from my house. TACO-BOOK is alleged to be in the top 100 taco stands in the USA. It does not, however, seem to feature the wood-fired oven baked bolillo shown in the video.

Will report back after my next trip to that town.
