Love carrot cake. If I'm making it for a special occasion, I'll add toasted pecans instead of walnuts. Now I want to make some cupcakes and eat them all...

The best carrot cake is all about the cream cheese frosting.

Even though it went a little bit liquidy, this did have really good cream cheese icing... with raspberries, glitter jelly and plain chocolate orange!
