I was planning for some cheese with my lunch today. I didn't have much on hand. A container of Vermont white* cheddar "cracker cut" slices sat in the refrigerator, though just 4 slices remained in it. That would be enough. I pulled the container out to finish them off.

Fresh blooms of vivid green mold had spread out over the slices since the last time I'd opened it. Disappointed, I tossed the container into the trash, and pulled out a box of smoked cheddar Cheez-Its. I need to get to the grocer and buy more cheese.


* They call it white, but really it's a sort of yellow.

Using tools and fire to alter the environment and process food is what made humans capable of spreading to nearly every environment on the planet. Except for Lubbock. Humans have not mastered West Texas quite yet.

I have this argument with Keto cult members all the time. If humans did not evolve to eat grain, why do we have more copies of the gene that breaks down long chain carbohydrates into sugars when we chew? We literally evolved to eat complex carbohydrates that other primates couldn't. We can process and store foods to survive over winters and droughts when other species can't.
