I like to make big batches of breakfast burritos (scrambled eggs, sausage, sweet peppers, onions, cheese, etc.) and freeze individually. Or just scramble and freeze portions to later add to burritos. I add butter and try not to cook them completely (rubbery) so the retain their moistness after defrosted overnight.
