A few of us are following a low-carb / ketogenic diet, so here's a place for support, recipes, and info sharing. :)

As in introduction, here is my blurb about the keto diet from Casey's Instant Pot thread:
It's a low-carb high-fat diet. Carbs are VERY low so your body starts making ketones from fat and using them for fuel instead of glucose, a state called nutritional ketosis.

I use it to help manage my type 2 diabetes, and it's an effective weight loss diet for many people. It also has neurological effects due to the brain using ketones instead of glucose. My sister has found it significantly reduces the frequency of her migraines (from 15/month to 1-2/month), and it's been used since the 1920s to treat certain kinds of epilepsy.

I'll start us off with some useful info:

Avoid products with IMO "fiber"


I recently tried Good Dee's Muffin Mix, and it was spectacularly delicious. Too delicious as it turns out. My continuous glucose monitor showed my blood sugar going up when it shouldn't have, so I rechecked the package. Each muffin supposedly has 2 net carbs (9 total and 7 fiber), but "fiber" had a footnote indicating it was AdvantaFiber IMOs (isomalto oligosaccharides).

Being a science librarian, I did some research including reading academic journal articles. Long story short, the US government has classified IMOs as fiber based on patchy research, but more recent research shows that it is ~85% digestible and affects the body (raising blood sugar and insulin) much like pure glucose. The UK government concurs and has classified it as a digestible/glycemic carbohydrate.

I certainly don't blame Good Dee's, they're just trusting the US government's assessment, but my glucose monitor supports the research that IMOs are just regular old carbs. As such, they're not a good keto alternative. :(

I'm gonna try this in the near future, it's gonna be fun seeing as my diet seems to be 90% carbs.

My lunches will most likely devolve into the saddest deli platters.

Well, I'll throw in one of my local faves. Her recipes are usually great -- I've been basically eating nothing but stuff from her cookbook for the past six months. Warning, though -- if you are not a garlic FIEND, whatever she says for garlic, garlic powder, or onion powder, use about an eighth of what she says!

Yes, but you have to (and this is SUCH a weird way to learn to think) get more fat in there. Keto turns the whole "food pyramid" upside down, so that most of your calories come from fat. Heavy cream in your coffee, cheese in everything, bacon like you're having some sort of bizarre bacon fetish dream. Without enough fat in your diet, you probably won't feel satisfied or lose weight -- and too much protein is hella bad for your kidneys.

Starting out, read food labels. You'll be stunned at how much sugar they sneak into prepared stuff; even stuff you'd think had none at all. You don't want "low fat", "light", "lite", or "reduced fat" anything -- you'll find they just pump stuff full of sugar to make up for the fat they remove. At first, it is a genuine PITA, but you'll learn pretty quickly what's okay and what's not.

It's also perfectly okay to ease into this. Just start noticing the carbs you're eating and don't eat 'em! I'm afraid, dear Lady Darnk, this includes the crust of that pizza -- but you can eat all the pizza topping you want. And a gentle word of advice -- lots of veggies, unless you want to be plugged up like the pipes in a cheap hotel. :eyepop:

You'll run into keto nuts who make it sound like you need at least a high school chemistry lab to "do it right", but you really don't. And the thing is, you don't feel deprived or constantly starving when you eat this way -- most everybody I've talked with who is on it was amazed that it worked, as was I. So don't think deprivation, think MOAR BACON!

One of the great things I discovered because of my brothers gluten allergy works awesome for keto as well. I like to make meatloaf and meatballs but instead of using bread crumbs, I've been using chicharrones (cracklins as they call them in the South). I also have been sauteing the meatballs in bone broth instead of frying them. It makes for some really moist and tasty meatballs.

Recipe:

2 lbs Ground Chicken, turkey, beef or lamb
(you can add ground pork but I wouldn't do the whole meatloaf or meatball in ground pork because it does not hold together as well).
1/2 cup finely ground parsley
1/4 cup finely ground celery
1/2 cup finely ground onion
2 cloves finely ground garlic
1 cup finely ground chicharrones (I use my food processor to grind these but you can buy them ground already on Amazon)
(other seasonings depending on the type of meatball, maybe basil or oregano, or cumin).
1 egg
1 carton beef, vegetable or chicken broth
Salt and Pepper

Finely chop the chicharrones, remove from food processor. Add parsley, onion, celery and garlic to food processor and finely chop.
Put meat in a bowl, add ground chicharrones and vegetables.
Season with appropriate seasonings.
Add egg.
Put deep pan on stove and add 1 carton broth.
Form meatballs and drop into broth.

You can add a bit of olive oil and lightly saute the meatballs first and then add the broth.

For meatloaf, just form it into a bread pan and bake at 350 for about 45 min. Use a meat temp gauge to see if it's at 165 degrees or higher.

It really is pretty good without the crust. I had one from a pizzeria that was a little tough to scrape off, so I might get extra cheese next time to make it come off easier.

Also, if you like homemade mini pizzas, try making just the toppings in a ramekin or little pie tin (like for pot pie). I spread olive oil in the tin and then add a few spoonfuls of unsweetened pizza/spaghetti sauce (Rao's is good and low carb enough). Then a big handful or two of shredded cheese plus toppings... pepperoni, diced ham, mushrooms, olives, whatever you like.

I bake it at 350 for 10 minutes (I think, but depends on your oven of course). Then, most important part: WAIT! Give it 5 minutes, then use a blunt knife or spoon to pull the cheese away from the sides a little. Then WAIT another 5 and pull the cheese away a little more. Then WAIT another 5, and at that point it's usually set enough to pull up completely and slide out of the tin onto the plate. It's still softish though, so I eat with a fork.

Google keto pizza crust, there are lots of recipes if you're into cooking. In particular, check out fathead dough, which is made from nut flour and melted mozzarella. I haven't tried it, but it seems pretty popular.

I made KetoConnect's chicken pizza crust today and it's a winner. It's just canned chicken (which I'm normally not a fan of), plus an egg and grated parmesan. The end product had just a slight aroma of chicken, and would probably not even have that much if I'd used more toppings (I only put a spoonful of pizza sauce and a gentle dusting of shredded cheddar).

It's super easy, but takes about 30 minutes total for cooking (10 minutes to dry the chicken, 10 to prebake the crust, and 10 to bake the pizza). Everyone who tried it agreed it was fucking awesome. :)

Breakfast this morning: Tuna salad, tomato, and avocado sandwiches, using green-leaf lettuce leaves as the bread. I used the whole avocado, sliced up with plenty of salt and lime juice. So delicious and so filling! :)

I made a cauliflower mash last night. I steamed one head of cauliflower in the microwave, drained the water, then dumped it all into food processor (a food processor is easier and will do the whole cauliflower at once but you can use a blender if you don't have a food processor). Then I add 4 tablespoons of Philadelphia cream cheese, salt and pepper to taste and puree the whole thing. It tastes like mashed potatoes with sour cream with half the calories and totally keto friendly.
