How do I do this?

That's not a texture. That's 3d and it's remarkably low prim. Is there a tool in a newer version of Blender that helps you create a weave like that, or did this person do painstaking do what had to be incredibly tedious - and how did they get it that low prim with good LOD? Even with decimating the hell out of it, I can't imagine.

I'm also looking for someone who can teach me how to make plants and flowers, so I can put like center pieces on my tables or a little plant on top of a dresser. More than willing to pay the right tutor.

I think there are tools in blender that make creating patterns kind of like this a bit more convenient than placing every piece. I found this which maybe uses a vaguely similar technique:

Now here's another dumb Blender question. Is there a way to make the interface on the newer versions look lik 2.79? I can't even figure out how to place a cube in Blender 4.

Personally I keep a printed paper 'keyboard' of Blender's hotkey layout. It's the one thing which hasn't changed much from one version to the next.
