It looks like it started out as a Keto recipe and then somehow the sugar and syrup were put back in. Or maybe just trying to be flourless? I can see using the eggplant to add moisture but I would have to try it to be convinced.

Depending how you cook it, eggplant can have a pretty mild taste. I can see it being overwhelmed by a more robust flavour like chocolate.

Other than that, I'd put this in the same category as chocolate-covered brussels sprouts.

I've got enough eggplant for a while with my eggplant parmesan. It came out really well but 5 or 10 pounds was too much. It's in the freezer.
